🍠 Fall Classics, Reimagined Vegan


Fall, dear Reader, isn’t knocking politely, it just kicked the door off the hinges and yelled “WHO’S HUNGRY?”

So as an answer to that, we’ve got vegan pot pie, white wine pumpkin risotto, stuffed acorn squash, roasted cauliflower steaks, shepherd’s pie, and mushroom bourguignon all showing up to give you a complete, satisfying meal in a single recipe.

Pumpkin Risotto

Call this the king of fall dinners. Creamy arborio rice cooked with pumpkin and herbs, balanced with a splash of wine and stock. Finished off with a nutty cranberry topping that brings the crunch in all the right places.

Vegan Stuffed Acorn Squash

Acorn squash roasted until caramelized and filled with quinoa, chestnuts, cranberries, sage, and parsley. An easy vegan centerpiece that’s festive, filling, and ready to serve straight from the oven.

Roasted Cauliflower Steaks

Caramelized on the edges, tender in the middle, and laced with subtly smoky spice, these vegan cauliflower steaks are a whole new way to flex your veg game. Serve them over butter bean puree with a drizzle of parsley sauce, or let the easy roasted slabs speak for themselves.

Vegan Shepherd's Pie
