🧁 My FIVE fave vegan muffins


Hey Reader,

You know what I never ever served on our food truck? Muffins. And you know why? I just felt for years that they weren't exciting and groundbreaking enough to "fit my brand" or whatever. How dumb is that?

So today, I am going to share with you three veganized muffin recipes that I grew up on in all of their cakey, fluffy glory!

Ok, here are some muffiny bangers for ya:

Ritz Carlton Blueberry Muffins

Do you see the serious flood of blueberry juice these bad boys are dripping with? There is a reason why when the NY Times published this coveted recipe, folks like my mom made them faithfully for decades.

JUST LOOOOK at this dang thing!

I am so happy with how this pumpkin muffin recipe turned out. I mean, its got rosewater and pistachios, and it's dripping with cardamom glaze.

And gosh darn, was it easy to photograph! The photos of this one might be some of my faves I have done for the blog so far. Take a look and lemme know what you think.

EASY apple cinnamon muffins

Packed to the darned roof with juicy apple chunks and warm spices, this quick and easy vegan apple muffin recipe uses everyday ingredients for a delicious treat perfect for any time of the dang year!

Banana chocolate chunk with walnuts

OMG are you gonna freak out about these if you are already a fan of the Malaysian banana donuts on my blog (if you haven't made them, stop what you are doing at once and knock that easy project out).

Sweet Potato Muffins

You like a fluffy pony in the mist, or a basketball playing doggy? Well, these moist vegan sweet potato muffins are fluffier than Air Bud and topped with a crunchy maple pecan streusel (which Air Bud is NOT).
