When my wife and I were in our early 20s, we had just had our first daughter and we lived in our "starter home" (can you believe our little old house in Keansburg NJ only cost $44k?!?). Anyway, we were young and broke and ate a lot of bagels from GEM's bagels a few blocks from our home. Our fave now is Bagel Station in Red Bank, which I gotta say, makes a much better bagel than GEM's, but we didn't know any better back then, I guess.

Anyway, since we were pretty scrappy, we were always finding fun ways to turn big cheap bagels into super yummy meals, and that's what the heck I'm sharing with you in today's email.
